Some of Australia's leading natural wine and wild-fermented beer producers are coming together under one roof to pour drinks and chat for one night only.

Brunswick bar Bar Spontana, the latest spot from the team behind beloved Footscray bar Mr West is all about wild-fermented beers and wines – which is to say, those inoculated by ambient yeasts and bacteria, rather than lab-cultivated species.

For one night only, it’s bringing three true luminaries of the scene together. There’s gregarious Italian wine importer Giorgio de Maria (who also owns Sydney’s Paski Vineria Popolare wine bar and co-founded Rootstock Festival); Tom Shobbrook, one of the earliest natural wine makers in Australia, known for releases such as Poolside and Tommy Ruff; and Ashley Huntington (of Tasmania’s Two Metre Tall) who pioneered wild-fermented ales in Australia alongside breweries such as La Sirene.

There’ll be a stacked list of Shobbrook wines and Two Metre Tall beers and ciders available by the glass, plus a new-release take on the collaborative beer Two Metre Tom. It features Barossa shiraz skins co-fermented with dark ale in oak barrels for 12 months, then matured a further 12 months before bottling.

Head chef Pipat “Noomie” Yodmunee will also be plating his usual regional Thai dishes, along with a few South Australia and Tasmania-inspired specials. Walk-ins are welcome, but bookings are recommended.
